Change owner Nikki Anderson dug through the rubble of her store on Monday morning trying to salvage whatever she could before city officials shut the building down for repairs.

When Jay Patel's lunchtime corporate crowd at Moti Cafe started winding down last year, he knew he needed to pivot.

"I had to do something," he said. "I started to look at pizza sales and they were through the roof everywhere, so I thought, why not Indian pizzas?"

Patel's approach of starting with foods people are already familiar with and adding the Indian flavors was already working well at Moti Cafe. Add that to his mission to make Indian food more accessible, pizza felt like the perfect fit.
